Join us for a once-in-a-lifetime culinary journey at Klaw Restaurant, where we will be hosting a four-course dinner and tasting some of the world's finest and rarest old liquors. A small group of collectors, connoisseurs, influencers, and VIPs will have the opportunity to sample vintage cognac, armagnac, madeira, port, and rum, all while enjoying the intimate atmosphere of Klaw's Private Dining room. A palet-altering experience.

The tasting is a guided tasting event that includes a 4-course dinner. We will start with a cocktail and move on to vintage champagne. Then, the first tasting will consist of 3 selections, followed by a food pairing selected by Chef Payley. We will repeat this process over the course of 4 courses, so you will have the opportunity to try at least 12 selections and the vintage champagne. Glasses will remain on the table for second nosings and comparisons.

After the dinner, we will move upstairs to the rooftop bar where you can sample all 25 rare spirits and wines at the pouring table while overlooking Biscayne Bay at the historic Venetian Bridge. During the final hour of the evening, and as the D.J is playing,  you will have the opportunity to taste all of the drinks again. Pours will be half an ounce or 1/44th of a bottle, and you can choose to revisit any drinks you particularly enjoyed. You willmreceive a tasting booklet with a short description of each of the drinks for you to take home with you.

BACKGROUND ON OLD LIQUORS

Bay van der Bunt is a world-renowned collector of rare and old spirits and wines. With over 10,000 bottles in his cellar, he has amassed a collection that includes some of the oldest and finest spirits and wines in the world. Over the past 30 years, van der Bunt has focused on collecting rare cognac, madeira, and port, and has even acquired wines from four different centuries, including a bottle of 1715 Madeira discovered at an auction in London.

Despite the incredible rarities in his cellar, van der Bunt does not keep his collection as a museum. Instead, he has moved his collection to Miami, where it is managed by Bart Laming. Bart will be opening and serving some of the rarest and finest old cognac, armagnac, port, madeira wine, rum, and whisky at the Old Liquors VIP Dinner at Klaw Restaurant.

This special event is limited to just 20 guests, who will have the opportunity to taste a selection of spirits and wines, beginning in 1790. It is an experience not to be missed by those seeking to sample some of the world's finest and rarest old liquors.

THE LOCATION

The Old Liquors VIP Dinner will take place at Klaw Restaurant, located in the historic Miami Women's Club building, built in 1925. As one of Miami's oldest buildings, it provides the perfect setting for an unforgettable dining experience.

Klaw Restaurant is located in a historic building with a rich history and offers diners a unique culinary journey. The restaurant occupies the completely restored 95-year-old Women’s Club building, a grand Spanish Renaissance structure spanning 14,800 square feet across three floors. The building features a grand dining room with massive colonial-arched windows, private dining space, a theater kitchen, and Edgewater's only rooftop bar, offering stunning views of Biscayne Bay and the Miami Beach skyline, allowing guests to experience the history and culinary delights of Klaw Restaurant.

At the dinner, you will be treated to the best possible menus, expertly prepared by Executive Chef Michael Paley to create the ultimate dining experience. The rare and old spirits and wines will be uncorked and served by Bart Laming, the head of Old Liquors Inc, the company owning the collection. With unmatched attention to detail and extensive knowledge of old wines, Laming has tasted wines and spirits from four centuries and is devoted to finding the finest and rarest old liquors for the collection.

With the guidance of Bay van der Bunt, the original collector, Laming attends wine auctions and receives offers from buyers looking to sell their old wines and spirits.
